This month we focus on egg establishments. The egg is a symbol of springtime, renewal and fertility. Eggs are ubiquitous at Easter gatherings, where they are generally featured in all manner of radiant hues. It is hard to even imagine Passover without them, and in great quantities. Greeks crack red eggs together on Easter midnight.

While the egg is easy to cook, it is said to be difficult to get just right. Whether sunny-side up, poached, scrambled, formed into an omelet or used in French toast or croque monsieur, egg cookery is fun, light, healthy and, when done well, thoroughly enjoyable. Only...
